Kathirikka / Brinjal Upperi

Ingredients needed for Kathirikka Upperi
4-6 Kathirikka cut each into 8 pieces
2 cups onions sliced
 2 tsps chilli powder
1 tsp coriander powder
1 pinch turmeric powder
Salt to taste
coconut oil as needed

How to prepare Kathirikka Upperi
Cut Brinjals / Kathirikka in to quarters first and then again cut them into two .  Make it slightly bigger pieces than we usually cut for Mezhukkupuratti.
Mix Chilli powder, Coriander powder, turmeric powder and salt to taste, together with a little water and apply on the brinjal pieces.
Keep aside for ten minutes.
Heat oil a flat fry pan, fry the onions till they are golden. Spread the brinjal pieces on the top of the onions  and fry.
Do not keep it on high flame, they will get burnt. Simmer and stir in between.  till the brinjals get soft and tender.
Serve hot with plain rice as a side dish.
